現代人重視增肌減脂,而蛋白質是增加肌肉量的營養素,減重醫師蕭捷健提醒,並非每種蛋白質增加肌肉量的效果都相同,挑選蛋白質要看其「蛋白質消化率校正胺基酸評分」(PDCAAS),數值越高,代表蛋白質品質越好,其中以雞蛋白、大豆、乳清分數最高,即蛋白質品質最好。
蕭捷健在其臉書表示,在營養學領域,蛋白質品質也是一個重要的評分,即PDCAAS。分數從0到1,越高代表蛋白質品質越好。PDCAAS分數算法為食物中蛋白質的消化率X胺基酸分數。
他列出一些常見食物的PDCAAS的分數,結果發現雞蛋、大豆、乳清均為1;牛肉為0.92;鷹嘴豆為0.78;黑豆為0.75;蔬菜為0.73;穀物為0.59;花生為0.52;全麥為0.42;麩質(俗稱麵筋)為0.25。
蕭捷健表示,「雞蛋通常被賦予1.0的PDCAAS值,這意味它提供完美比例的必需胺基酸,並且人體能夠非常有效地吸收這些胺基酸。」
蕭捷健說明,PDCAAS分數1的蛋白質就像高級汽油,能讓身體超有效率運作。分數太低的蛋白質就像山寨油,對人體可能有害,例如,吃太多麵筋會讓某些人體發炎。選擇PDCAAS分數高的蛋白質,可以確保身體獲得完整的必需胺基酸,提升健康和運動表現。選對烹調方式也能讓蛋白質吸收效率變最好。

- 1.00:雞蛋、大豆、乳清
